Partnering with Oscar through Harvest Town Coffee, we introduce Geisha, a standout coffee variety. Oscar, a well known and celebrated third-generation farmer, manages his family farm alongside his studies in agronomics.
Under the Colombian sun, picking occurs strategically from 6 am to 12 pm, ensuring ripe Geisha cherries. At La Divisa, this rhythmic harvest happens every 20 days, guaranteeing fully ripened cherries with higher sugar levels.
Post-picking, Geisha cherries undergo a simple process. On sunny days, they soak in water tanks for 2-3 hours, removing impurities. The batch then moves to a marquee for drying. On colder, cloudy days, it rests in fermentation tanks for 24 hours before drying on patios over 18 to 22 days.
