El Salvador - Emilio Lopez Diaz El Manzano Red Bourbon

Crafted by Emilio López and Jose Roberto Santamaría, this Red Bourbon coffee is a testament to generations of expertise. Partners in Odyssey Coffees, they operate six farms in El Salvador and Portland. Finca El Manzano, a family legacy since 1872, underwent a transformation in 2005, introducing new varieties and an on-site wet mill.

El Salvador's coffee story is immense. Once the 4th largest global producer, it's celebrated for Bourbon and Pacamara varieties.

Ripe cherries from selective handpicking undergo meticulous processing at El Manzano’s on-farm wet mill. Fermentation lasts 16-20 hours before washing. Parchment dries on patios for 7-10 days.
